RECIPE OF THE MONTH -- NANCY'S FAMOUS CHINESE CHICKEN SALAD

Salad Ingredients:

1 head Napa cabbage, chopped
1 cup slivered almonds, toasted
1 package Ramen noodles (without the seasoning packet)
4 chicken breasts, boneless, skinless
garlic salt
soy sauce
sesame oil

Dressing Ingredients

4 T. brown sugar
1 t. salt
6 T. rice vinegar
1/3 cup oil (1/2 sesame oil & 1/2 safflower oil)
1 t. pepper

Chicken Directions:
Wash and dry chicken breasts, season generously with garlic salt soy sauce, and sesame oil. Bake in a 350-degree oven for 45 minutes. Let cool and shred.

Salad Directions:
Chop Napa cabbage, and add to a large bowl the toasted slivered almonds and crumbled package of Ramen noodles.

Dressing Directions:
Mix all together with a whisk.

Put chicken, salad and dressing together in a bowl and toss.
